Dark Chocolate Mousse Pie

Every time I make this chocolate mousse pie, it is such a big hit. I made it for my boyfriend's parents and my own parents last Christmas. It is light, fluffy and completely delicious. My father, an extremely hard dessert critic, absolutely loved it and thought it was the best chocolate pie he's ever had. I recently remade it and changed up the recipe a little bit. It requires no baking (unless you make your own crusts) and is pretty easy to make. This is a great recipe to keep bookmarked, especially when those warmer summer nights come along. You can easily make or buy a graham cracker, dough or cookie crust. This recipe makes 2 large pies or 18 small pies.

Dark Chocolate Mousse Pie

Ingredients: 
  • 12 oz dark chocolate
  • 1 tsp vanilla
  • pinch of salt
  • 3 3/4 cups whipping cream
  • 2 to 3 tbsp Truvia Baking Sugar
Preparation:
  1. Combine chocolate, vanilla and salt in a blender. Pulse until chopped and combined.
  2. Bring 1 cup of whipping cream to boil and slowly add to blender until chocolate is melted and smooth. Make sure to scrape down sides of blender so chocolate melts evenly. 
  3. Transfer chocolate to bowl and let cool until at room temperature. 
  4. In a large bowl, beat 2 cups of cream and 2 tbsp of Truvia in a large bowl. Whip until cream forms stiff peaks. 
  5. Add chocolate slowly and fold chocolate into whipped cream. 
  6. Pour mousse into crusts. 
  7. Chill until set. 
  8. Beat remaining whipping cream and sugar in a medium bowl until stiff peaks form. 
  9. Transfer whipped topping to pastry bag and pipe topping onto pie or spoon topping in fluffy mounds onto pie.
