Pow Boom Yeah Crazy Delicious Dinner

Wednesday was Matt and mine 7-year anniversary. Woo-wee! Sadly, Matt had class that night until super late so I didn't even really get to see him. To make up for this, I made him a delicious dinner Tuesday night and it was crazy good and pretty simple. This protein and fiber friendly meal is heavy on the veggie with some dairy throughout.


Creamy Asiago Chicken

Ingredients:

  • 2 Chicken breasts 
  • 1/4 c Light Mayo
  • Asiago Cheese (Shaved works best, you can find it usually in the fancy cheese section of your local grocery)
  • Fresh Ground Pepper
  • Garlic Powder
  • Onion Powder

Directions: 

  1. Bring your chicken to room temperature. Preheat your oven to 375/400. 
  2. Season both sides of your chicken with fresh ground pepper, garlic powder and onion powder.
  3. Transfer chicken to baking dish (I like a Pyrex dish).
  4. Smear tops of breasts with a light covering of light mayo. 
  5. Sprinkle Asiago cheese on top of mayo covered chicken. 
  6. Place in oven for 35-45 minutes until asiago cheese is bubbly and slightly browned. 

Garlic Mashed Cauliflower

Ingredients:

  • 2 cups frozen cauliflower
  • 2 garlic cloves
  • fresh ground pepper
  • 2 tbsp light cream cheese (I like the onion and chives flavor for this recipe)
  • Preferred flavor bunion bites (If you only have the cubes, just smash up the cube in a small ziplock before adding it to the recipe)
  • 1/4 c - 1/2 c grated Parmesan cheese

Directions: 

  1. Bring a pot of water to a boil and blanch cauliflower. Completely drain when done. 
  2. In a large bowl, add all ingredients and drained cauliflower.  Use an immersion blender to blend all ingredients until smooth. 
  3. If you do not have immersion blender, you can use a regular blender or food processor and blend until creamy. You may need to add some olive oil so it's easier to blend. 

Maple Roasted Carrots

Ingredients:

  • 1 pound of carrots, peeled and cut lengthwise into 2 to 3 inch long segments
  • 2 tbsp maple syrup (I used light maple syrup but you can use whatever you have in your kitchen)
  • 1 tbsp olive oil
  • Pinch of cinnamon

Directions:

  1. Preheat oven to 425*F. 
  2. Line a baking sheet with aluminum foil. 
  3. Add maple syrup, olive oil and cinnamon to a bowl and stir. 
  4. Dip carrots into maple syrup mixture and place on baking sheet. 
  5. Bake in oven for about 20 minutes.
